And well since autumn is just around the corner...

I thought I'd share a recipe with you that we had for desert and well a few snacks this evening ;)

~Pumpkin Nut Raisin Bread~
1 c. oil
4 eggs, beaten
2/3 c. water
2 c. pumpkin
3 1/3 c. flour (all purpose)
1 tsp. cinnamon
1/2 tsp. ground clove
1 tsp. nutmeg
1 tsp. baking powder (Aluminum Free)
1 tsp. baking soda
1 1/2 tsp. salt
3 c. sugar
1 c. raisins (optional)
1 c. chopped pecans (optional)

Grease & flour 3 loaf pans (regular loaf size) or 8 mini-loaf pans.  Combine oil, eggs, water, & pumpkin: beat.  Sift together in mixing bowl the flour, spices, soda, baking powder, salt, & sugar.  Make a well in center of flour mixture.  Add pumpkin mixture & blend until dry ingredients are moistened.  Stir in raisins & pecans (optional).  Mix well.  Turn into pans & bake at 350 for 1 hour - regular loaf pans, 45-50 minutes mini-loaf pans.  Let cool; remove from pans.  When cooled wrap ~Or like we did, chow down ;)
Freezes well.
